Este espumante, produzido exclusivamente a partir da casta Baga, captura toda a essência da Vinha Pan. Trata-se do primeiro espumante em Portugal elaborado sem qualquer adição de sulfitos. Além disso, não passa por processos de clarificação ou estabilização. A fermentação ocorre em tanques de inox, seguida por um estágio de 30 meses em garrafa.
