Dieser Wein verbindet seine Qualität mit dem Namen der Kartäusermönche, die seit 1587 ein einsames Gebetsleben im Kloster Santa Maria Scala Coeli in Évora führten. Es wurde zum ersten Mal im Jahr 1986 hergestellt. Vinifikation des Branco Cartuxa DOC 2021: Wenn die Trauben den idealen Reifezustand erreicht haben, werden sie geerntet und in die Weinkellerei transportiert, wo der technologische Prozess mit dem vollständigen Entrappen und leichtem Zerkleinern und Pressen beginnt , Kühlung und Würzeklärung. Die Gärung erfolgt in Edelstahltanks bei einer kontrollierten Temperatur von 16 °C. Anschließend reift er 8 Monate lang auf der Feinhefe mit regelmäßiger Batonnage.
