Vinifizierung des Weins Quinta da Pedra Escrita Biológico Branco: Manuelle Lese in kleine perforierte Kisten von 15 kg, Gärung mit Kältetechnologie in reduzierender Umgebung bei kontrollierter Temperatur von etwa 16ºC. Die Trauben werden ohne Quetschen und ohne Entrappung unter inerten Bedingungen gepresst, um das gesamte aromatische Potenzial der Trauben zu bewahren. Es wird großer Aufwand betrieben, damit alle vorfermentativen Arbeiten mit größter Sorgfalt durchgeführt werden, da sie für die intrinsische Qualität des zukünftigen Weins verantwortlich sind. Der gesamte Wein gärt in gebrauchtem französischem Eichenholz und verbleibt dort nach einer kleinen Umfüllung über feine Hefen mit periodischem Rühren („battonage“) bis zur Herstellung der Endmischung Ende Frühling. Gärung und Reifung 6 Monate in französischer Eiche mit Hefelagerung bis zur Abfüllung, danach 4 Monate Flaschenreifung.
