Melgaço, die nördlichste Region Portugals, ist durch eine Reihe von Gebirgszügen geschützt, die eine perfekte Verbindung zwischen Niederschlag, Temperatur und der Anzahl der Sonnenstunden ermöglichen, die für die beste Reifung der Trauben der Rebsorte Alvarinho erforderlich sind. Dieses klimatische Merkmal während der Reifung wird oft mit dem Mikroklima von Monção und Melgaço in Verbindung gebracht, das heiße Tage mit kühlen Nächten abwechselt und so die Erhaltung frischer und fruchtiger Aromen mit einer präsenten, aber moderaten Säure ermöglicht, ganz im Stil, den wir für den Soalheiro definiert haben. Vinifikation des Vinho Verde Alvarinho Soalheiro: Die Trauben, ausschließlich der Rebsorte Alvarinho, werden von Hand in kleinen Kisten geerntet und innerhalb kurzer Zeit zum Weingut transportiert. Nach dem Pressen wird der gewonnene Most 48 Stunden dekantiert, gefolgt von der Gärung bei kontrollierter Temperatur unter Verwendung vorselektierter Hefen für diesen Zweck. Die Abfüllung erfolgt nach der Stabilisierung des Weins und wird von einer Flaschenreifung begleitet. Die Vinifikation des Alvarinho Soalheiro zielt darauf ab, einen Wein zu erhalten, der die Qualität der Trauben konzentriert und eine gute Entwicklung nach der Abfüllung ermöglicht.
