Herstellung des Schaumweins Quintas de Melgaço Reserva Bruto: Sanftes Pressen und kalte Dekantierung von 12 bis 36 Stunden bei kontrollierter Temperatur zwischen 12ºC-16ºC. Gärung bis zu 15 Tage mit Temperaturkontrolle zwischen 16ºC-18ºC. Dieser feinen und aromatischen Basiswein wird Hefe und eine Tirage-Likör hinzugefügt, die Flaschengärung erfolgt über 12 Monate bei kontrollierter Temperatur zwischen 10ºC-12ºC. Reifung in Edelstahltanks mit kontrollierter Temperatur und regelmäßiger Entfernung der Hefesätze für 3 bis 6 Monate. Gärung für 12 Monate in der Flasche vor dem Degorgieren.
