Vinifikation des Rotweins Quinta das Bageiras Pai Abel: Wie die Trauben dieses Weins eine Parzelle mit zwei gemischten Sorten ergeben, die die Art der Bepflanzung eines jahrhundertealten Weinbergs nachbilden soll. Auch mit diesem Ziel und durch die Präsentation im Weinberg wurde die Produktion auf zwei oder drei Trauben pro Sorte beschränkt. Da die Trauben beider Sorten gleichzeitig und ohne Entrappen geerntet werden, gären sie etwa eine Woche lang in einer offenen Presse. Während dieser Zeit wurde mehrmals täglich mit Holzmassen umgepumpt, bis der Wein die richtige Intensität erreicht hatte. Schließlich gärte der Wein in gebrauchten französischen Eichenfässern, wo er reifte. Anschließend wird der Wein in ein kleines Holzfass umgefüllt, wo er ohne Schönung oder Filterung bis zur Abfüllung verbleibt.
