Vinifizierung: Von Hand zum optimalen Zeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Mazeration mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch ständige Überpumpungen während der Fermentation. Diese erfolgt in Lagares bei kontrollierter Temperatur zwischen 28-30ºC, bis der gewünschte Grad Baumé erreicht ist. In dieser Phase wird der Weinbrand (Benefiz) hinzugefügt, was zu einem verstärkten Wein führt.
