Vinifizierung des Portweins Quinta Vale Dona Maria Reserva: Die Trauben werden vor der Gärung zu Fuß gestampft, wobei 15 % des insgesamt hinzuzufügenden Branntweins eingearbeitet werden. Dies ermöglicht eine Mazeration der Trauben bei niedrigeren Temperaturen und über einen längeren Zeitraum vor der Gärung. Wenn der Most zur Anreicherung bereit ist, erfolgt diese auf einmal, indem der Branntwein dem Most und den Schalen im Lagares hinzugefügt wird. Ein erneutes Stampfen sorgt für eine gute Homogenisierung und das vollständige Stoppen der Gärung. Der Most und der Branntwein verbleiben weitere zwei bis vier Tage im Lagares, mit einem sehr leichten Stampfen von 10 Minuten zweimal täglich. Anschließend wird er zusammen mit den Pressrückständen in die Fässer überführt. Die Weine reifen in sehr alten (über 100 Jahre) Eichen- und Kastanienfässern sowie in kleinen Edelstahltanks bis zum Monat vor der Abfüllung.
