In der Quinta da Boavista verwenden wir zur Sicherstellung der Erhaltung der Rebsortenmerkmale und der vollständigen Kontrolle des Produktionsprozesses manuelle Lese und manuelle Auswahl der Trauben, gefolgt von Entstielen und sanftem Quetschen der Beeren. Als Gärbehälter nutzen wir traditionelle Granit-Lagares mit Fußstampfen, Edelstahltanks zur Gärung und für kleine Chargen lebensmittelechte PVC-Behälter oder Gärung in neuen französischen Holzfässern mit 500 Litern Fassungsvermögen. Jeder dieser Gärtypen verleiht dem Wein einen besonderen Stil. Unsere Vinifizierungsphilosophie ist einfach: die besten Eigenschaften unserer Trauben behutsam herauszuarbeiten. Die sortenreinen Weine sind die einzigen, die in 500-Liter-Fässern reifen. Nach einer Reifezeit von 15 bis 20 Monaten erfolgt die Abfüllung. Alle Weine sind mit Naturkork verschlossen. Da sie weder filtriert noch kälte-stabilisiert sind, kann sich mit der Zeit ein Bodensatz bilden.
