Vinifizierung des Porto Burmester Jockey Club Reserve Tawny: Von Hand zum optimalen Reifezeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Mazeration mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch ständiges Umpumpen während der Gärung. Diese erfolgt in Edelstahltanks bei einer kontrollierten Temperatur zwischen 28-30ºC, bis der gewünschte Baumé-Grad erreicht ist. In dieser Phase wird der Weingeist (Benefício) zugegeben, wodurch ein verstärkter Wein entsteht. Ein Wein von sehr guter Qualität, der durch Mischung von Weinen mit unterschiedlichen Reifegraden und Herkunft gewonnen wird, wodurch ein reifer, kräftiger und intensiver Endwein garantiert wird.
