Os vinhos Marqués de Riscal Reserva são elaborados principalmente a partir de uvas de vinhas de tempranillo plantadas antes dos anos 70, cultivadas nos melhores solos argilo-calcários da Rioja Alavesa. Esta casta suporta bem o envelhecimento em barrica e em garrafa, graças ao seu bom equilíbrio entre acidez e taninos finos. A casta Graciano, cuja presença no lote não excede os 10%, aporta frescura e vivacidade na cor. A fermentação ocorre a uma temperatura controlada e o tempo de maceração nunca excede os 12 dias. Os reservas da Riscal passam cerca de dois anos em barricas de carvalho americano, produzindo um vinho que corresponde ao estilo clássico de Rioja: fresco, fino, elegante e muito adequado para envelhecimento prolongado. Antes de ser colocado à venda, o vinho passa no mínimo um ano a amadurecer na garrafa; tempo suficiente para mostrar toda a complexidade que o tempranillo pode alcançar.
