Der Most durchläuft zwei Dekantierungen (Débourbage), eine im Kelterhaus unmittelbar nach dem Zerkleinern und die zweite, eine Débourbage à froid, in Edelstahltanks bei 6°C über einen Zeitraum von 24 Stunden. Eine langsame, gekühlte Gärung, bei der die Temperatur unter 18 °C gehalten wird, findet in Edelstahltanks statt, wobei jede Sorte getrennt bleibt. Der Wein durchläuft vor der endgültigen Mischung eine vollständige malolaktische Gärung. Die Nachgärung findet in der Flasche bei 9 °C in den tiefsten Kellern von Pol Roger (33 Meter unter Straßenniveau) statt, wo der Wein bis zum Remuage (Händeschütteln) aufbewahrt wird, was heutzutage in der Champagne eine Seltenheit ist. Die sehr feine und anhaltende Mousse, für die Pol Roger bekannt ist, verdankt viel diesen tiefen, kühlen und feuchten Kellern.

Im Mund erfüllt er den Gaumen mit Raffinesse und beeindruckender Länge. Trotz der deutlichen Reife am Gaumen weist der Wein eine hervorragende Frische und eine sehr präsente Säure auf, die auf eine glänzende Zukunft schließen lassen.
Das Aroma ist intensiv und erinnert an einen Korb voller roter Früchte, in dem sich Himbeere, Johannisbeere und Cassis vermischen, mit den zusätzlichen Nuancen exotischer Mango und Papaya.
