Dieser Wein verbindet seine Qualität mit dem Namen der Kartäusermönche, die seit 1587 ein zurückgezogenes Leben des Gebets im Kloster Santa Maria Scala Coeli in Évora führen. Er wurde erstmals 1986 produziert. Vinifikation des Cartuxa DOC Branco 2021: Wenn die Trauben den idealen Reifegrad erreichen, werden sie geerntet und in den Weinkeller transportiert, wo der technologische Prozess mit vollständiger Entrappung und leichtem Quetschen, Pressen, Abkühlen und Klärung des Mostes beginnt. Die Gärung erfolgt in Edelstahltanks bei kontrollierter Temperatur von 16ºC. Es folgt eine Lagerung auf feinen Hefen für 8 Monate mit regelmäßiger Batonnage.
