Vinificação do vinho Borges Quinta de São Simão da Aguieira Encruzado:após chegada à adega, as uvas são refrigeradas e conduzidas para a prensa, onde sofrem uma prensagem muito suave e apenas é aproveitado o mosto de esgotamento. Segue-se a clarificação do mosto, para separar as partes sólidas. Inicia-se a fermentação a temperatura controlada entre os 16º e os 17ºC durante cerca de 10 dias. Após o fim da fermentação alcoólica o vinho estagia sobre as borras finas durante 3 meses.
