Von Hand zum optimalen Zeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Mazeration mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch ständige Umwälzungen während der Gärung. Diese erfolgt in Lagares bei einer kontrollierten Temperatur zwischen 28-30ºC, bis der gewünschte Baumé-Grad erreicht ist. In dieser Phase wird der Weingeist (Benefício) hinzugefügt, wodurch ein verstärkter Wein entsteht. Hochwertiger Wein aus einer einzigen Ernte, abgefüllt zwischen dem vierten und sechsten Jahr nach der Ernte.
