TITAN von Távora-Varosa Daemon „Sescenti Sexaginta Sex“ (666) ist ein Weißwein aus einem alten Weinberg, der über 140 Jahre alt ist, gelegen im Landkreis Sernancelhe, auf einer Höhe von 850 Metern. Dieser Weinberg, mit einer Fläche von 0,80 Hektar, wächst auf granitischen und quarzreichen Böden, wobei die Rebsorte Cerceal unter anderen gepflanzten Sorten dominiert. Vinifikation: Die Vinifikation wurde mit viel Einfachheit und wenig Eingriff durchgeführt: frische Trauben im idealen Reifezustand, von Hand in 20 kg Kisten geerntet, wurden zur Kellerei transportiert, wo sie einer sorgfältigen manuellen Auswahl, Entrappung und sanften Zerdrückung unterzogen wurden. Ohne Pressung ging es direkt in neue Fässer aus französischer Eiche, wo die alkoholische Gärung und die malolaktische Gärung stattfanden und anschließend für weitere 24 Monate gereift wurde, mit regelmäßiger Aufhebung der feinen Hefen und kontrollierter Temperatur und Feuchtigkeit.
