Vinifizierung des Weins Bairrada Filipa Pato Nossa Tinto: Von der Herkunft, vom Weinberg bis zur Flasche, ist die Philosophie, einen Wein zu schaffen, der den Ausdruck der Baga-Traube unverfälscht und ohne Kunstgriffe respektiert. Es werden traditionelle Vinifizierungstechniken mit minimaler Intervention beibehalten. Der Nossa Tinto stammt aus alten Weinbergen verschiedener im Kartenmaterial erwähnter Gebiete. Die Weinbergsarbeit erfolgt manuell unter Beachtung traditioneller Techniken der Region, wobei die natürliche Vegetation ohne Einsatz von Herbiziden erhalten bleibt. Mit einem kleinen Anteil ganzer Trauben (etwa 10 %) erfolgt die Vinifizierung der Baga in einem Eichenfass, das von der Zeit der Römer inspiriert ist. Er ruht 18 Monate in 500-Liter-Fässern aus feinkörniger französischer Eiche, 80 % gebraucht und 20 % neu. Im Jahr 2011 wurden 2500 Flaschen und 110 Magnumflaschen abgefüllt. Alle sind manuell mit natürlichem Wachs versiegelt, um eine gute Reifung im Keller zu gewährleisten.
