Die Weinlese erfolgt manuell, mit sorgfältiger Auswahl der Trauben. Die Beeren werden entrappt und sanft zerdrückt. Als Gärbehälter wurden traditionelle Granit-Lagares mit Fußstampfen verwendet. Anschließend reifte der Wein mindestens 18 Monate in französischen Eichenfässern. Alle Weine sind mit Naturkork verschlossen. Da sie weder filtriert noch kälte-stabilisiert sind, können diese Weine mit der Zeit einen Bodensatz bilden.
