Die Trauben werden am frühen Morgen manuell in kleinen Kisten geerntet, um ihre Frische zu bewahren, und dann in einem Kühlraum abgekühlt, bevor sie vinifiziert werden. Bei der Ankunft im Weingut werden die Trauben sorgfältig auf dem Sortiertisch ausgewählt, dann entrappt, sanft zerkleinert und in ovale 3000-Liter-Zementtanks umgefüllt, wo die alkoholische Gärung bei kontrollierter Temperatur stattfindet. Anschließend erfolgt eine Mazeration nach der Gärung für sieben Monate.

Es erinnert an den Geruch von Regen, der auf trockenen Boden fällt, an gemähtes Gras und Orangenschale.
