Vinifizierung des Kalkstein 3 des Hauptrotweins: Manuelle Lese mit Auswahl auf einem Sortierband am Eingang des Weinkellers. Es folgt das Entrappen und Zerkleinern, wobei das Ergebnis in temperaturkontrollierte Edelstahltanks zur alkoholischen und malolaktischen Gärung überführt wird. Mazeration für etwa 20 Tage unter Verwendung der Delestage-Technik. Der Wein reift 24 bis 30 Monate in gebrauchten 225-Liter-Fässern aus französischer Eiche. Anschließend reift er weitere 6 Jahre in der Flasche, bevor er auf den Markt kommt.
