Die Trauben wurden zum perfekten Reifezeitpunkt in 20-kg-Kisten von Hand geerntet und dann zur Adega Reserva Quinta do Sol transportiert. Bei der Ankunft im Weingut werden die Trauben zunächst manuell sortiert, gefolgt von einer sanften Entrappung, wonach die Beeren entkernt werden werden sortiert, bevor sie durch Schwerkraft in die kleinen Gärtanks geleitet werden. Die Zerkleinerung erfolgt nur beim Eintritt in den Tank durch die Schwerkraft und verhindert so eine unerwünschte Oxidation. Die Gärungen werden überwacht und angepasst, um das Beste aus jeder Rebsorte herauszuholen. Anschließend erfolgt eine postfermentative Mazeration, um Tannine aus den Kernen zu extrahieren, die die aus den Schalen gewonnenen Tannine ergänzen und so die Entwicklung eines breiteren Mundgefühls fördern und das Alterungspotenzial des Weins erhöhen.
