Der Schaumwein Real Companhia Velha Brut ist das Ergebnis einer sorgfältigen Auswahl von Pinot Noir und Chardonnay, die im Wesentlichen von der Quinta de Cidrô in São João da Pesqueira stammen, wobei ein Teil des Pinots von der Quinta do Casal da Granja auf der Alijó-Hochebene geerntet wird. Das Cidrô-Terroir ermöglicht aufgrund seiner Höhenlage und seines milden Klimas einen längeren Zyklus in der Rebe, sodass sowohl Pinot Noir als auch Chardonnay zum perfekten Zeitpunkt geerntet werden können, um prickelnd zu sein. Obwohl diese wunderschöne Quinta auf einer Höhe von 550 m liegt, verfügt sie über kargen Schieferboden, was zu einer geringeren Produktion führt, was diesem Schaumwein eine ausgezeichnete Textur, Volumen und Säure verleiht. Auf der Alijó-Hochebene, bei Quinta do Casal da Granja, führen die fruchtbareren Böden und das noch kühlere Klima zu frischeren und aromatischeren Weinen. Durch gezieltes Ausdünnen werden die grünsten Trauben gesammelt und in kleinen Edelstahltanks als Basis für die endgültigen Chargen vinifiziert, um ein hohes Maß an natürlicher Säure in den Trauben zu bewahren.
