VITIKULTUR UND ENOLOGIE Die Weinberge sind in zwei Terrassen angelegt. Alle Trauben des Weins Xisto Roquette & Cazes wurden manuell gelesen und stammen ausschließlich aus der Subregion Cima Corgo und der Subregion Douro Superior. Alle Trauben wurden entrappt und in konisch geformte Edelstahltanks zur Gärung überführt, wo die alkoholische Gärung bei kontrollierter Temperatur begann. Während des Gärprozesses wurde die französische Technik des „délestage“ angewendet, deren Hauptziel es ist, die Kontaktfläche mit der Schale zu erhöhen, während der Most/Wein über die Tresterhaube abgezogen wird. Das Ergebnis ist ein konzentrierter und komplexer Wein, der die Eleganz respektiert und der Rustikalität entflieht.
