Bei Mouchão vinifizieren wir ALLE Rotweine in offenen Steinpressen. Vollständige Trauben mit Stielen werden in den Mazerationsprozess einbezogen, daher ist der Erntezeitpunkt besonders kritisch, da ein empfindliches Gleichgewicht zwischen Zucker, Säuren, der gesamten phenolischen Reifung (Farbe, Tannine usw.) sowie der Verholzung gefunden werden muss des Engaço. Die kompletten, von Hand geernteten Trauben werden in 20-kg-Kisten zum Weingut transportiert, wo sie mit den Füßen in Pressen gestampft und etwa 4 bis 6 Tage lang vergoren werden. Im Jahr 2016 waren Tannine, Farbe und Reife des Stiels nahezu perfekt. Dieser junge Wein wird im Herbst einer malolaktischen Gärung in großen Holzfässern (5.000 L) unterzogen. Mitten im Winter wird er gefiltert und reift anschließend ohne Eingriff etwa vier Jahre lang in unseren Mahagoni- und Macacaúba-Behältern. Nach der Abfüllung reift er weitere 3 Jahre in unseren Kellern, bevor er 12 bis 24 Stunden vor dem Servieren dekantiert oder geöffnet wird. Bis 2036 sein bestes Potenzial erreichen.
