Vinifikation des Aguardente Velha Ramos Pinto: Die Vorbereitung der Chargen, ihre Reduzierung und Reifung werden Jahr für Jahr bis zur perfekten Reife kontinuierlich verfolgt. Es werden mit Portwein gereifte portugiesische Eichenfässer verwendet. Durch diesen Prozess erhält die Spirituose bestimmte Arten von Tanninen und phenolischen Substanzen, die zum Bouquet und charakteristischen Geschmack von „Aguardente Velhíssima“ beitragen.
