Vinifikation des Weins CARM Maria de Lourdes rot: In der Kellerei, mit modernster Technologie und vollständiger Temperaturkontrolle. Die Trauben, die sich nicht in einwandfreiem Zustand befanden, wurden entfernt. Es erfolgte eine vollständige Entrappung und sanfte Zerkleinerung sowie ein thermischer Schock, ohne Zugabe von Sulfit, gefolgt von einer Hochextraktions-Mazeration bei 21ºC über 8 Tage; Malolaktische Gärung zu Beginn der Fermentation, um klare und komplexe Aromen zu erhalten. Reifung: 24 Monate in französischen Eichenfässern.
