Vinifizierung des Sidónio de Sousa Merlot Tinto Weins: Abbeeren/Quetschen und Abkühlung der Trauben im Weinkeller in kleinen offenen Bottichen, wo die Maischegärung beginnt und anschließend die Fermentation folgt. Das Stampfen erfolgt manuell mit Holzstampfern, um eine stärkere Extraktion der weintypischen Merkmale der Merlot-Traube zu erreichen. Nach der langsamen Fermentation in kleinen offenen Bottichen wird der Wein in Zementtanks und Edelstahltanks überführt, wo er bis Januar des folgenden Jahres ruht, zu diesem Zeitpunkt wird er geklärt und in neue französische Eichenholzfässer umgefüllt, in denen er 6 Monate reift.
