Vinifizierung des Ribeiro Santo Grande Escolha Rotweins: Die Trauben wurden vollständig entrappt und in kleine Edelstahltanks gegeben, wo sie 24 Stunden bei niedriger Temperatur mazerierten, bevor die alkoholische Gärung mit ausgewählten Hefen und kontrollierter Temperatur begann. Die alkoholische Gärung dauerte etwa 15 Tage, mit Fußstampfen für eine gute Extraktion von Farbe und Aromen. Nach der Gärung wurde der Wein in neue französische Eichenfässer umgefüllt, wo er 14 Monate bis zur Abfüllung verblieb, und nach der Abfüllung mindestens 6 Monate in der Flasche in einem kühlen Keller lagerte.
