Vinifizierung des Porto Burmester 30 Jahre: Von Hand zum optimalen Reifezeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Maischegärung mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch ständiges Umwälzen während der Gärung. Diese findet in Lagares bei einer kontrollierten Temperatur zwischen 28-30ºC statt, bis der gewünschte Baumé-Grad erreicht ist. In dieser Phase wird der Weingeist (Benefício) hinzugefügt, wodurch ein verstärkter Wein entsteht. Ein Wein von hoher Qualität, der durch die Mischung von Weinen aus verschiedenen Jahrgängen hergestellt wird, um eine Komplementarität der organoleptischen Eigenschaften zu erreichen, die typisch für diesen Stil des gealterten Tawny ist. Er reift in Holzfässern über variable Zeiträume, wobei das auf dem Etikett angegebene Alter dem ungefähren Durchschnittsalter der verschiedenen Weine im Verschnitt entspricht und den Charakter des Weins in Bezug auf die durch die Fassreifung verliehenen Eigenschaften ausdrückt.
