Der Sandeman Porto Tawny 20 Anos wird nach der traditionellen Methode des Portweins hergestellt. Die ausgewählten Trauben werden vor der Gärung entrappt und zerdrückt, unter kontrollierter Temperatur, mit Maischegärung, um die besten Bestandteile zu extrahieren. Die Zugabe von Weinalkohol zum idealen Zeitpunkt stellt das Gleichgewicht zwischen Körper und Bouquet des Weins her. Dieser Moment wird vom Önologen gewählt, unter strenger Kontrolle der Temperaturen und Gärdichten, abhängig von der Rebsorte, dem Reifestadium und der gewünschten Endsüße.
