Vinifizierung: Von Hand zum optimalen Zeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Mazeration mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch ständige Überpumpungen während der Fermentation. Diese erfolgt in Lagares bei kontrollierter Temperatur zwischen 28-30ºC, bis der gewünschte Baumé-Grad erreicht ist. In dieser Phase wird der Weinbrand (Benefício) hinzugefügt, was zu einem verstärkten Wein führt. Reifung: Die Natur beschenkt uns mit besonderen Jahren. Von Jahr zu Jahr unterschiedlich, resultierend aus besonderen Bedingungen, ergibt jede Colheita von Cálem einzigartige Weine mit außergewöhnlichem Charakter und Premium-Qualität. Cálem lässt alle Colheita Ports mindestens 10 Jahre reifen und füllt nur nach den Marktbedürfnissen ab, wobei der gesamte restliche Wein in Holz weiter reift und dadurch eine einzigartige Komplexität gewinnt.

Intensiver Farbton
Vollmundig und intensiv im Mund, zeigt Aromen von sehr reifen Früchten, kombiniert mit noch jungen Tanninen und einigen Anklängen von Trockenfrüchten. Intensives und langes Finish.
In der Nase zeigt sich ein Duft von Fruchtgelee, kombiniert mit Noten von Pflaume und Rosine sowie leichten Anklängen von Gewürzen wie Muskatnuss.
