Nachternte und nach Sorten getrennte Gärung der Beeren, sauber und nach verschiedenen Sorten und ohne Zerkleinerung, in französischen Eichenfässern von Seguin Moreau, bei kontrollierter Temperatur und über einen langen Zeitraum. Eigene Hefen. Malolaktische Gärung in Fässern. Reifung in französischen Eichenfässern von Seguin Moreau, je nach Rebsorte, für 12 Monate. Minimaler Einsatz von Sulfiten. Vermischung der Rebsorten, Abfüllung und Reifung des Weins in der Flasche für 2 Jahre auf dem Weingut.
