Quinta dos Carvalhais Colheita Branco ist ein Weißwein aus dem Dão von außergewöhnlicher Qualität, der höchste Ausdruck von Eleganz und Reichtum. Als Erbe alten Wissens verbindet Quinta dos Carvalhais Erfahrung mit Innovation, um sehr elegante Weine mit intensiv zarten Aromen und der einzigartigen Persönlichkeit der Region zu schaffen. Gouveio und Encruzado wurden separat geerntet. Die Trauben wurden aus 20-kg-Kisten direkt in die Entrappungs- und Quetschmaschine entladen. Nach dem Pressen wurde der Most einer statischen Dekantierung unterzogen. Anschließend wurde er in Edelstahltanks gefüllt, in denen einheimische Hefen zugesetzt wurden. Ein Teil des Mostes, 10 % des Encruzado, vergor in gebrauchten französischen Eichenfässern, der Rest verblieb im Edelstahltank. Der Gouveio vergor im Edelstahltank. Die Gärung erfolgte bei 18 °C über einen Zeitraum von etwa 20 Tagen. Von diesem Wein vergor und reifte 10 % des Encruzado etwa 6 Monate in 225-L-Fässern aus gebrauchter französischer Eiche. Der restliche Teil der Charge (90 %) vergor und reifte im Edelstahltank. Die Kombination des Fassweins mit dem Tankwein trug dazu bei, im Endverschnitt ein größeres Gleichgewicht zwischen dem Wein und den aromatischen Komponenten des Holzes zu erzielen.
