Quinta dos Carvalhais ist die Weinmarke, die sich auf die Produktion der besten und schmackhaftesten Weine des Dão spezialisiert hat und als die größte Referenz in der Region gilt. Quinta dos Carvalhais Branco Especial ist ein Wein ohne Jahrgang, der die Exzellenz des Dão bei der Herstellung großer Weißweine und das Lagerpotenzial, das die Weine der Region auszeichnet, bestätigt. Die Trauben der für diesen Wein bestimmten Rebsorten wurden in kleinen 20-kg-Kisten in der Kellerei angeliefert und direkt in die pneumatische Presse entladen. Die Moste, die durch den Einsatz von Inertgasen vor Oxidation geschützt wurden, unterlagen einer statischen Dekantierung bei niedriger Temperatur über einen Zeitraum von 24 Stunden. Anschließend wurden sie in temperaturkontrollierte Edelstahltanks überführt, wo die Gärung etwa 20 Tage lang bei kontrollierten Temperaturen stattfand. Bei diesem Wein wurde versucht, alte Gewohnheiten des Dão bei der Reifung von Weißweinen wiederzubeleben, bei denen es üblich war, sie über lange Zeiträume in alten Eichenfässern zu lagern und so im Laufe des Jahres verschiedene Umweltbedingungen zu durchlaufen.
