Der Real Companhia Velha brut Schaumwein ist das Ergebnis einer sorgfältigen Auswahl von Pinot Noir und Chardonnay, die hauptsächlich von der Quinta de Cidrô in São João da Pesqueira stammen, wobei ein Teil des Pinot auf der Quinta do Casal da Granja auf dem Hochplateau von Alijó geerntet wird. Das Terroir von Cidrô ermöglicht durch seine Höhe und das milde Klima einen längeren Zyklus an der Rebe, sodass sowohl Pinot Noir als auch Chardonnay zum perfekten Zeitpunkt für die Schaumweinbereitung gelesen werden können. Dieses wunderschöne Weingut, obwohl es auf 550 m Höhe liegt, verfügt über einen armen, schiefrigen Boden, was zu geringeren Erträgen führt und diesem Schaumwein eine ausgezeichnete Textur, Volumen und Säure verleiht. Auf dem Hochplateau von Alijó, auf der Quinta do Casal da Granja, führen die reicheren Böden und das noch kühlere Klima zu frischeren und aromatischeren Weinen. Durch eine gezielte Ausdünnung, um einen hohen natürlichen Säuregehalt der Trauben zu bewahren, werden die grüneren Trauben gelesen, die in kleinen Edelstahltanks als Basis für die Endmischungen vinifiziert werden.
