Quinta dos Carvalhais Colheita Branco ist ein Dão-Weißwein von außergewöhnlicher Qualität, der ultimative Vertreter von Eleganz und Reichtum. Quinta dos Carvalhais ist der Erbe alten Wissens und kombiniert Erfahrung mit Innovation, um sehr elegante Weine mit intensiv delikaten Aromen und der einzigartigen Persönlichkeit der Region zu kreieren, die getrennt geerntet wurden. Die Trauben wurden aus 20-kg-Kisten direkt in den Entrapper-Brecher entladen. Nach dem Pressen wurde der Most einer statischen Dekantierung unterzogen und anschließend in Edelstahltanks gegeben, in denen einheimische Hefen hinzugefügt wurden. Ein Teil des 10 %igen Encruzado-Mostes wurde in gebrauchten französischen Eichenfässern vergoren, der Rest verblieb im Edelstahltank. Gouveio im Edelstahltank vergoren. Die Gärung erfolgte bei 18 °C über einen Zeitraum von etwa 20 Tagen, 10 % des Encruzado wurden vergoren und etwa 6 Monate lang in gebrauchten 225-Liter-Fässern aus französischer Eiche gereift. Der restliche Teil der Charge (90 %) wurde in Edelstahltanks vergoren und ausgebaut. Die Verbindung von Fasswein mit Fasswein trug dazu bei, in der endgültigen Mischung eine größere Ausgewogenheit zwischen dem Wein und den für das Holz typischen aromatischen Komponenten zu erreichen.
