Vindima feita à mão e depois de uma segunda seleção dos cachos, feita na mesa de escolha à chegada da adega, as uvas passaram pelo processo de desengace total e posterior pisa a pé em lagar de mármore, durante 48 horas, para realização de contacto pelicular pre´-fermentativo. As fermentações ocorreram em dez spin barrels de carvalho francês, novos e com capacidade de 500L, seguindo-se duas semanas em curtimenta. O Servas de Bacchus tinto 2016 estagiou durante dois anos em barricas novas de carvalho france^s, de 225L. Foi engarrafado em maio de 2019 Conjunto de 3 Garrafas, todas do ano 2016.
