Vinifikation des Quinta Vale Dona Maria Reserva Portweins: Die Trauben werden vor der Gärung mit dem Fuß zertreten, wobei 15 % des gesamten Alkohols hinzugefügt werden. Dadurch können die Trauben vor der Gärung bei niedrigeren Temperaturen und über einen längeren Zeitraum mazerieren. Wenn der Most zur Anreicherung bereit ist, geschieht dies in einem Arbeitsgang, indem die Spirituose dem Most und den Schalen in der Presse hinzugefügt wird. Eine neue Lauffläche sorgt für eine gute Homogenisierung und den vollständigen Gärstopp. Der Most und der Brandy verbleiben noch zwei bis vier Tage in der Presse, wobei zweimal täglich jeweils 10 Minuten lang sehr leicht gepresst wird. Es wird zusammen mit den Pressen in die Fässer gebracht. Die Weine reifen in sehr alten (über 100 Jahre alten) Eichen- und Kastanienfässern und in kleinen Edelstahltanks bis einen Monat vor der Abfüllung.
