Wenn die Weinlese im Dão endet, bleiben nur die Trauben zurück, die diesen Colheita Tardia hervorbringen werden. Es ist die Zeit der Herbstsonne, der ersten Regenfälle und der Feuchtigkeit, der Blätter, die in Santar so kontrastreiche Farben und Muster annehmen. Nur in den besten Jahren gelingt es uns, diesen Wein zu produzieren, den wir Outono de Santar nennen, weil er uns stets an die einzigartige Magie dieser Jahreszeit in der emblematischen Vila de Santar erinnert. Vinifikation des Weins Outono de Santar Late Harvest 2013: vollständiges Entrappen, sanfte pneumatische Pressung mit Nutzung von 20 % des Traubensafts, natürliche statische Klärung, alkoholische Gärung in "zweite Verwendung"-Fässern bei 20 °C. Reifung: 6 Monate Battonage mit 12 Monaten in Fässern zweiter Verwendung.
