Vinifizierung des Sidónio D Sousa Reserva Tinto Weins: Zerquetschen mit teilweiser Entrappung und Abkühlung der Trauben im Weinkeller in kleinen offenen Bottichen, wo die Maischegärung beginnt und anschließend die Fermentation, ohne Zugabe von Enzymen und Hefen. Das Stampfen erfolgt manuell mit Holzstößen, um die Extraktion der weintypischen Eigenschaften der Rebsorte zu erhöhen. Nach der Fermentation in kleinen offenen Bottichen wird der Wein in Zementtanks und Edelstahltanks überführt, wo er bis Januar des folgenden Jahres ruht, zu diesem Zeitpunkt wird er geklärt und in 4.000-Liter-Fässer aus einheimischer Eiche umgefüllt, wo er 12 Monate reift.
