Quinta dos Carvalhais ist die Weinmarke, die sich auf die Herstellung der besten und schmackhaftesten Dão-Weine spezialisiert hat und die größte Referenz in der Region darstellt – sie repräsentiert die Kunst, Authentizität und Qualität der besten Dão-Weine. In dieser Quinta dos Carvalhais Reserva Branco werden alte Gewohnheiten der Region hinsichtlich der Reifung von Weißweinen wieder aufgegriffen, als es üblich war, sie über einen längeren Zeitraum in alten Eichenfässern zu lagern. Die Trauben wurden im Weingut in 20-kg-Kisten empfangen direkt in die pneumatische Presse ausgetragen. Die ordnungsgemäß vor Oxidation geschützten Moste wurden einer statischen Dekantierung bei niedriger Temperatur für einen Zeitraum von 24 Stunden unterzogen. Anschließend wurden sie in temperaturkontrollierte Edelstahltanks geschickt, wo die Gärung etwa 20 Tage lang bei Temperaturen von nicht mehr als 16 °C stattfand. Die Reifung erfolgte 16 Monate lang in gebrauchten Fässern (20 % 500 Liter; 80 % 225 Liter).
