Vinifizierung des Weins 2 (Zwei) Quintas Weiß: Das Erntedatum jedes Parzelle wird nach aufeinanderfolgenden Traubenproben im Feld entschieden. Nach der getroffenen Entscheidung werden die Trauben manuell geerntet und zum Vinifizierungszentrum transportiert, getrennt nach Rebsorte und Parzelle. Es folgt eine Kaltmazeration der ganzen Trauben für einen Zeitraum von etwa 24 Stunden. Die frischen Trauben werden sanft gepresst und der Most in unterirdische Tanks überführt, wo die Dekantierung erfolgt. Danach wird die Trübung des Mostes ausgeglichen und die Gärung beginnt. Etwa 90 % des Weins gärt und reift in Edelstahltanks, die restlichen 10 % in französischen und österreichischen Eichenfässern unterschiedlicher Kapazität.

Der Gaumen zeigt Weite, aber stets sanft, wobei dieselbe Art von reifen Früchten mit feiner Säure wiederzufinden ist. Der Abgang ist lang und sehr anhaltend, was es schwer macht, nicht erneut zu trinken.
Zarter Duft, in dem sich süßliche Aromen von Blumen wie Rosen mit der frischen aromatischen Steinigkeit vermischen. Nach leichtem Schwenken zeigt sich die reifere Frucht begleitet von einem leichten rauchigen Aroma.
