Mit Trauben der typischsten Rebsorten des Alentejo, produziert in der Unterregion Borba, wurde der Wein Rótulo Cortiça hergestellt, ein wahres Aushängeschild der Adega de Borba. Die Trauben stammen von alten Weinbergen und wurden während der Reifung streng kontrolliert, wobei sie in kleinen Mengen geerntet wurden. In der Kellerei begann nach dem Entrappen und sanften Quetschen der Trauben die alkoholische Gärung, die etwa 10-15 Tage bei kontrollierter Temperatur von 24ºC andauerte, um die Aromen und fruchtigen Geschmacksnoten der Traube besser zu extrahieren. Um die polyphenolische Komplexität, die Tannine und die Struktur des Weins zu erhöhen, verblieb dieser in der Maische in einem Prozess der nachgärigen Mazeration. Die malolaktische Gärung erfolgte anschließend in Edelstahltanks. Um seine organoleptischen Eigenschaften zu betonen und zu steigern, reifte der Wein 12 Monate in Fässern des 3. und 4. Jahres aus französischer Eiche sowie in exotischen Holzfässern, worauf eine 6-monatige Flaschenreifung im Keller folgte.
