Vinifizierung des Weins Vallado Tinto 2018 von 12 Litern: Etwa 80% der Trauben stammen von Weinbergen, die in den 1990er Jahren gepflanzt wurden, und 20% von alten Weinbergen im Alter von 60 bis 100 Jahren. Die Trauben werden in Edelstahltanks mit einem Fassungsvermögen von 5 und 10 Tonnen vollständig entrappt vinifiziert. Der Most fermentiert etwa eine Woche bei 23º-25ºC mit programmierter automatischer Überpumpung. Reifung: Etwa 70% des Weins reifen 16 Monate in Edelstahltanks und der Rest in 225 l französischen Eichenfässern des 3. und 4. Jahres.
