Der Wein Quinta do Poço Lobo Cabernet Sauvignon rot entstand aus Trauben, die im besten "Terroir" der Quinta do Poço do Lobo für das Haus Cabernet Sauvignon, dem Talon D. Júlia, angebaut wurden. Es wurden die Trauben ausgewählt, die sich durch ihren außergewöhnlichen Gesundheitszustand und Reife auszeichneten. In der Kellerei fand nach dem Entrappen der Trauben die präfermentative Mazeration, die alkoholische Gärung bei kontrollierter Temperatur und die Nachgärung über einen Gesamtzeitraum von mehr als 15 Tagen statt. Nach Abschluss der malolaktischen Gärung reifte der Wein 12 Monate in halben Fässern aus französischer Eiche Allier. Er wurde ohne Klärungs- oder Stabilisierungsmittel abgefüllt, sodass er Ablagerungen aufgrund der Ausfällung natürlicher Verbindungen des Weins bilden kann.
