Vinifizierung des Carm Grande Reserva Tinto Weins: Es wurden Trauben entfernt, die sich nicht in einwandfreiem Zustand befanden, vollständiges Entrappen, sanftes Quetschen und thermischer Schock, gefolgt von einer kalten vorfermentativen Mazeration in der Presse für etwa 12 bis 24 Stunden, danach wurden die Maischen in breite und flache Gärbehälter überführt, wo sie etwa 10 Tage bei Temperaturen zwischen 24 und 26ºC vergoren. Die malolaktische Gärung erfolgte natürlich und wurde Ende Dezember abgeschlossen, ein Teil des Weins durchlief diese Gärung im Holz. Reifung: 12 Monate in neuen Fässern aus französischer Eiche mit extra feiner Körnung
