Neben seiner Bekanntheit in der Weinproduktion des Alentejo hat die Adega Cooperativa de Borba eine große Tradition in der Herstellung von Branntweinen, wobei traditionelle Rebsorten aus der Region Borba verwendet und ausgewählt werden. Der Trester ist das Produkt, das aus dem Pressen der Weinmaische bei der Weinherstellung entsteht, welche in eigenen Destillationsgefäßen destilliert wird, wobei streng auf Temperaturen und Destillationszeiten geachtet wird, um so die Trennung der verschiedenen Alkohole sowie die Echtheit und Qualität der Branntweine zu gewährleisten. Anschließend reift er etwa 24 Monate in Holzfässern aus französischer Eiche zur endgültigen Verfeinerung vor der Abfüllung.
