Vinifikation des Tinto Esporao Private Collection 2019: Jede Sorte wurde separat vinifiziert und gereift. Syrah und Aragonez werden in kleinen Lagares aus rostfreiem Stahl fermentiert, und das Treten mit den Füßen wechselt sich mit kurzen manuellen Pumpvorgängen ab, die zwei- bis dreimal täglich erfolgen, je nach täglicher Verkostung während der gesamten Fermentation. Alicante Bouschet gärt in einem kleinen Edelstahltank mit manuellem Umpumpen. Auf diese Weise und aufgrund der relativ empfindlichen Schale der Traube wird eine übermäßige Extraktion von Tanninen durch das Treten mit den Füßen vermieden. Nach dem Pressen wurden die Weine getrennt aufbewahrt. Die malolaktische Gärung fand in den Fässern statt und die Reifung erfolgte zu 30 % in neuen Fässern und zu 70 % in gebrauchten (1 Jahr) 225-Liter- und 500-Liter-Fässern. Nach 18-monatiger Reifung, in der nur ein Abstich unmittelbar nach der malolaktischen Phase durchgeführt wurde, wurde die endgültige Charge zusammengestellt und am 25. Juni 2015 mit nur leichter Filtration und ohne jegliche Schönung abgefüllt.
