Vinifizierung des Weins Castello D Alba Reserva Tinto 2021 in 3 Litern: Manuelle Lese, Empfang mit vollständiger Entrappung und sofortiger Pressung, die Trauben werden nach Sorten und Chargen vergoren, um frühzeitig eine strenge Auswahl zu treffen, die dann die Grundlage für den sehr traditionellen "Blend" der alten Welt bildet, zeigt die Kunst, Trauben nach Parzellen auszuwählen und die Kunst, Weine zur späteren Abfüllung auszuwählen. Die Fermentation erfolgt in kleinen Edelstahltanks bei Temperaturen um 28 ºC. Sanfte und kontrollierte Mazerationen, um elegante und aromatische Weine zu erhalten. Reifung: Ein Teil der Charge reift über einen Zeitraum von 12 Monaten überwiegend in französischer Eiche, mit einem kleinen Prozentsatz amerikanischem Holz.
