Präfermentative Mazeration bei 6ºC für drei Tage, gefolgt von alkoholischer Gärung bei 25ºC in Edelstahltanks und postfermentative Mazeration für 10 Tage. Reifte 12 Monate in neuen französischen Eichenfässern mit 225 Litern Fassungsvermögen.
